My team currently uses JSM to handle help desk service requests. I would like to have a daily post that shows the members of a slack channel how many requests are pending vs resolved at the end of shift each day.

You can do this with automation and smart values. Just create a scheduled automation that uses a JQL that gives you both created and resolved issues, then use smart values and the list function to create your Slack message. You learn more about how to use smart values with lists here.
