I am looking for a way to gather a custom report showing ticket status over the last year. Is there anyway to do this?

Any given issue can go through multiple statuses over the course of a year.
Can you provide more information about the content you want for your report? Are you looking for counts of issues? How do you want to count them based on Status and Date/Time?
Are you looking for cumulative totals? Trend charts?
