Can anyone tell me if there is a way to give access to one our our Jira Help Desk Project for a specific amount of time?
After a user takes a course, we give them 60 days access to our Technical Training Help Desk. We are currently doing this manually and it's not a quick or easy process to add and remove. Is there a way to do this for a specific amount of time, or with an expiration date? Thanks in advance!

By default, Jira Service Management doesn't have a certain limit for the access, only the limitation of the access for the users, since (at least for cloud) there isn't a metric that determines for how long the user has been active on the JSM.
Currently, on the marketplace there isn't a suitable app for your question that would be a potentional solution.
Welcome to the community Tara. There are no functionality that can restrict user access to the portal based on a specific time frame based on my knowledges and experiences. Your option will be having some external process (which you are already doing manually) to track the time frame and block those unwanted users against your JSM project.
NOTE - You can control what a user can access (i.e. project access/visibility) by configuring each project's Customers permissions where project admins can control members of project's "Service Desk Customers" project role.
Project settings >> Customer permissions
This essentially blocks your project's visibility/access via the portal. Only authorized users can see the project in the portal UI.
