I am unable to click on the issue type icon to change it in a queue as shown below
And when I select multiple tickets and click on the transition button there are no other options in the drop down box other than its current type, but I would like to change it to something else.
How do I go about correcting this?

Bulk changes of an issue type are supported, but you need to use the move action for this. The best way to address this is from the issues view, where you can search for the issues you want to update. Then, from the ... button near the top right of the search results select Bulk change all x issues:
From the wizard that follows after that, select the move issues option and follow the step by step instructions.
