I am building a workflow to where every time a sub-task is closed, a new one is created via automation. Each sub-task has info that I would like filled out by the person assigned to it. It would be best if this is done via fields. Can sub-tasks within the same project have different fields without creating a separate issue type for each? There are a lot of steps in the workflow so that would mean creating a ton of issue types.

No, the field configuration, screens and field context, for an issue are selected by the issue type and project.
