I need to change the customer feedback instead of having 5 icon ratings; I need only 3. How to configure that? I have checked the documentation but there is nothing related to how to manage the number of feedback
Any suggestion on how to do so?

Currently, it is not even possible to change survey labels. Please check this ticket JSDSERVER-4986.
But there are some paid apps in the marketplace.
These days you can automate so that [Proforma] "Forms" are attached to the ticket, including on the portal, so that the Reporter/Customer can fill out a "survey" form with whatever fields you want on it.
