We have a New Starter form in Jira and i would like to know if it is possible to automate copying the text from certain fields in the form into the issue summary so that is can be easily searched against.

I found i could link the field on the form to a Jira field in the issue. It may not have been 100% what i was looking for but it is a good 2nd best.
