Currently, we have several Service Desk Projects, and all these are present in Customer Portal.
Is it possible to limit the access or view of a customer/organization to whichever they are assign only?

Yes, you can do it just add those customers to that specific project he or she will only see those projects in the Customer Portal.

No, you don't need to add customers to JSM Licenses.
If you are Jira Admin and Project Admin, Simply go to the Project settings--->> Customer-->> Add Customer or Oraganizaton.
