We've already got our core Workflow set up fine.
The problem is that when we migrated from old JIRA to JIRA Cloud, we lost the AUTOMATIC Workflow Status changes based on another action occurring.
The specific automatic changes that we've noticed have stopped working are:
1. Status automatically changing from "Waiting for Customer" to "In Progress" when the customer adds a new Comment to the Issue.
2. Status automatically changing from "Resolved" or "Closed" to "Reopened" or "In Progress" when the customer adds a new Comment.
I'm not sure if getting this automation to work can be done from "Workflows" or if it needs to be an "Automation"? Either way, some specific guidance on how to do it would be fantastic (eg. screenshot of what the Automation would look like [if it does in fact need to be an Automation]).

I believe this can be achieved using Automation in Jira.
This is a standard use case in Jira Service Management, and you can refer to the automation template in the link below to set it up:
