We currently use a group to manage approvers for Change Management, where in 3 of the 8 members of the group give their approval prior to the status moving forward.
I need to be able to generate a report of the number of total approvals per member.
For example:
John Smith: 12 approvals
John Johnson: 5 Approvals
Each issue shows who approved in the "Approvals" section, but its not something I can filter for.
I've attempted to build automation to capture who is approving in comments, or as a tag so I can grab that to filter off of and build a report but all attempts at pulling Approvers has failed, I think because the group is stored as "Change Managers" and not approvers(group).

I'm afraid that it is not possible to generate such report in JSM.
If you consider the option of using a plugin, our Great Gadgets app offers a Pivot Table & Pivot Chart gadget that offers some fields related to the approval feature of JSM.
By using this dashboard gadget you will be able to generate all kind of statistics based on the approval fields and display them in form of table, heatmap table or charts of various types.
Specifically for the use case that you mentioned:
For getting a table like the one above, the gadget should be configured like this:
To get the chart, just change from Table to the desired chart type. In my example, I used Stacked Bar Chart.
