I'm using queue in in my service project to keep organized and I need to add another "team priority" bucket. How do I do that? I know how to make an additional Queue but this is different.

If you want to add a new queue that is shown in the section "Team priority" in your service project, you need to find the "Manage queues" button as the screen:
In this configuration "Manage queues" you can move a new queue to "Team priority" section
If you dont find this button, you may not have administration permission to this project.

In your above screen shot you have 3 things listed under Team Priority. I have many project names under team priority and I want to add several items here. I want them to live in the same Queue I have now, not make a new one. Luckily, I do have admin access.

You mean the results of your current queues will be different, so you want to aggregate results in this particular queue?
Screen shots would be a great way to show what you really want.

You cannot add additional queue categories currently. There is a suggestion to add a feature to allow you to group queues, JSDCLOUD-285, go and vote on it if you would like to see it implemented.
