Welcome Michael,
I suggest you do the Free Tutorials at Atlassian University:
You'll get free access for half a year.
I would say it depends if you want to use Jira Server or Cloud version since those are a little bit different now but overall I would start with installing my own trial version and by using resources that exist on the web (like official Atlassian Documentation or Youtube webinars) start exploring main features. Then you can dig in a little bitt more into details. There are also some training materials available on the official Atlassian University site (https://www.atlassian.com/university). It is up to you how much time you want to use to get familiar with the tool and what level of expertise you would like to achieve. But as soon as you start it would never end :) .. Every day there are so many new features added in all the Atlassian tools and all 3rd party plugins that would change your perspective on some solutions.

Hi @Michael J Brown, and welcome!
There are a number of "getting started" pages in the documentation for Jira, and several YouTube videos that will help. Also, there is *ahem* a really good article about how one person learned the system. Here are some links for you:

Hope this helps,
