Do you know if being a watcher of a Jira Feature (Epic ) will also make me watcher for the child issues (stories, tasks and bugs) ?

It will not.

If you would like this to be the case, an automation can be established to copy the watcher to the children of the epic.

No, as @Kristopher Perez said already, there is no way to do this built-in.  You will need to script or automate it.
