I tried to recreate this problem myself, so I created a new process control type project in my Jira Cloud site. However I was able to move this issue successfully between Approved and the Done state by using the board to drag this.
I took a closer look at this default workflow. It does have a condition on this transition to only allow users in that project with the resolve permission to be able to execute this permission. So perhaps somehow your account does not have this permission. Using the permission helper might help you to quickly determine if that is the case here.

Just for us to better understand and help you with this issue, can you please let us what happens when you try to move the ticket from Approved to Done?
Does it show any error?
Can you please go to the Project settings > Workflows > Click to edit the workflow > Diagram mode and check how is the transition from Approved to Done?
Maybe someone has added a validator or post function that is preventing the transition to be done.
