Turn off new atlassian editor for description field

How can we turn off the new atlassian editor for the description field? We already checked all our fieldconfigurations and in all of them the description field is set to use the Default-Text-Renderer. In the overview page of an issue though it is still possible to use the wiki-renderer. In the "New Issue" window the Default-Text-Renderer is correctly applied to the description field.

Is there any chance to disable the wiki-renderer? Or at least get the same behaviour for both views?

Also the webhook sends the description field as some custom rendered string instead of the Atlassian document format. Why? If the issue is retrieved through the API the description field is returned in the Atlassian document format. Is there any chance to get the same behaviour for both?
