Can I create one sprint that encompasses multiple projects?

I have several company-managed projects and would like to include these in the next sprint that we kick off.  Is that possible?

I have also the problem and want a BLANK project. This goody has been disabled some minor releases ago.

Maybe this this could be implemented again, because i spend more time changing alle items than if I would start from scratch....

You can't do that, a project requires some of the settings.  It doesn't matter what template you choose though, you can always change them later.  You might want to use the "create with shared schemes" at the bottom of the template select box too - that avoids creating more schemes.
