We recently migrated a Jira Core server from Azure to on premise. It basically was a lateral migration move. However, the emails being sent to users when there are changes contains the IP addresses of the old server. How and where can I adjust this?

For any calculations in Confluence, including any manipulations with table data and output of third-party macros, like JIRA Issues macro, you may use CelesteCS Math for Confluence.
Assume you have a table with three columns and three rows on your page – from A1 till C3, where row 1 is the header row. The sum calculation formula for rows 2 and 3 will be simple:
SUM(Table1.A2:C3)
There is a plenty of other functions in the macro, so you may perform any calculations using formulas in EXCEL style.

You'll need to find or write a "connect" add-on to provide that - I'm not aware of any that do it at the moment, but have a look at the marketplace.
