I would like to see progress of tasks each engineer has in my team.

How do I obtain report like that?

for example,

 - Report by Engineers on Sprint 1 & Sprint 2 / All Sprints

The best way since you want it per Engineer is to run a JQL Query then display the results in a report. May be "User Workload Report"?

I have the same query as Karahashi-san made above, could you please guide me how to run a JQL Query and display the results in the report as such User Workload Report ?
