It is possible to change the subject of JIRA notification emails to include information on the reason?
For example, we received an email notifying us that "USER commented on Key-25974". Is it possible that the subject of the e-mail will be replaced by this information?
The subject of the email here is: [JIRA] (Key-25974) Sodo - OSS Ultimate Beneficiaries Update
Is it possible to replace it with: [JIRA] (Key-25974) User commented on Key-25974
If so, can this change be done only on one project or must it be done for all projects?

I don't think this is possible with notifications out of the box, no.
The only variables are key, summary and portal name.
You could achieve the above with Automation - which you could also copy to each project.
As you're on server, Automation is a marketplace add on. There is a lite version that is free - I'd suggest you see if it does what you need before deciding whether or not you'd need the paid version.

I have already tried with automation, but unfortunately even with automation it is not possible to change the subject of the jira notification.
