Hi,
we already have an existing JIRA Software on our Server, but now I want to add / import my JIRA Core Projects from the Cloud into my JIRA Software. Is that even possible? If yes, how to do it?

Yes it is definitely possible. However be ready to go through so many steps.
Not sure if you know that Jira Cloud version is always at the latest. Then the very first step will be to upgrade your Jira Server to the same version than cloud.
You will have to have an intermediary instance that should have the same version than Jira Cloud. That's where you will be migrating your Projects to from Cloud. Once everything is good you will create an xml backup then import it to your Production.
However, you will have to make sure about Statuses, Custom Fields, ...
