I have missed any announcement for new triggers and actions in Automation for Jira Cloud. Like these three: Lookup issues, Edit request type & Edit comment:
How can I follow what's new with Automation (cloud only)? For the core products, there is Blog Posts | Atlassian Cloud | Atlassian Documentation.
Sometimes this information is posted in an Jira > Articles area, which you can follow here:

Others might have additional suggestions, but those are a start. Be sure to be logged in (to the Community or Support areas) before setting yourself as a "watcher".
I too wish there was a way to get more of a "customize feed" of the changes to our cloud product updates as they are deployed. I watch the above two, and still I am surprised by some New Features (as you noted in your OP).
HINT FOR ATLASSIAN: Many of us continue to feel out-of-the-loop about what is changing on the Cloud products we Administrate. Not knowing about cool new features is a NET-ZERO VALUE for your customers.
Like @Kalin U I've been trying desperately for a long time to jack-in to the appropriate feeds. Yet I know that I am missing things, despite my efforts. At minimum, a list of options for Admins to watch, per-product, would be a start.
