how to lock custom fields ?

Hai,

I am new to Jira.

please advise or help me. I have a workflow in the Jira cloud in that workflow three custom fields are there like start date and due date and end date. my problem is while opening to in-progress statutes the start date and due date should be editable and after that, the statuses in progress are going to be reopened statuses in that statuses the due date and start date should not be editable and the edit date should be editable. it this possible?
