We have created custom fields in our Tickets called Estimated Time and Remaining Time. I am trying to create a gadget for the dashboard showing Total Remaining Time for each Assignee for the current week.
It shows every ticket for that week for each Assignee so I can't get it to Group by Assignee. Is there a way to do this?

I understand that you would like to sum the Remaining time for all issues per assignee and display this number in a gadget. Have I understood it properly?
Unfortunately, JIRA does not have the functionality to sum the values of a field based on specific Criteria (Assignee, for example).
However, the add-on sumUp for Jira provides you this exact functionality, including the sumUp Filter Result Gadget that provides you with the sum of the columns in your filter.

Thank you so much for your response. I can see the add-on would sum up the totals however does it also allow me to consolidate then by Assignee, so instead of showing 10 tasks for 1 assignee, the individual time and then the sum, could it just show the 1 assignee's name and the total sum of time.
I am trying to get of how much capacity each assignee has in their schedule.

I hope you don't mind me stepping in. You can in fact group your results by assignee:
Just click Edit to access the gadget configuration and choose Assignee in the Group Field Y section.

I believe you are using JIRA Cloud application. Is that correct?
If that's the case, you can navigate to your JIRA Site > Type GG > type Find new Apps OR navigate to JIRA Settings > Apps > Find new Apps.
Type in the search bar Epic Sum Up to find the add-on and install it.

I installed the Epic Sum Up App and it shows a summary panel of remaining hours on tasks, sub tasks and projects however is there a way I can get this into a list view. What I am trying to achieve is to update my dashboard so I can see all my assignees (4 of them) showing a roll up of their estimated time remaining across all jobs so I can see what capacity we have.
Please see the below attachment, I am just trying to group Reece for example so it will just be 1 line item saying Reece - Est. 20 hours remaining, then Dean - Est. 12 hours remaining etc. I thought this Epic Sum Up should do that but it seems to only do a sum up on individual projects and tasks, is that correct?

Per your screenshot, you are using the default Filter results gadget of JIRA and not the sumUp Filter Result Gadget I mentioned previously.
Please, add the sumUp Filter Result Gadget to your dashboard and you will be able to select a field to sum up (remaining Hours) and another to group (Assignee):

The sum-up add-on I mentioned provides four gadgets (Including the sumUp Filter Result Gadget) when you install it, so you should be able to add it as soon as you installed the add-on.
I see that this question is tagged as JIRA Cloud. Can you please confirm that you are using JIRA Cloud and not Server? I'm not sure if the same features are provided on Server versions.

given Kylies last comment, she stated to have installed Epic Sum Up - which is in fact another app. :)
Right before, we were talking about sumUp for Jira. Unfortunately I can't say anything on whether Epic Sum Up is capable doing what is requested.
So @Kylie Manning please install the 'correct' app and give it a try.
