pull accurate reports of all issues completed but not deployed in the sprint

We are new to agile and sprinting and need to be able to show an issue as completed for the sprint, although it is still sitting on the board awaiting the deployment date, which could be a week or so after the sprint has finished. We want to report on this as the work having been completed, but just waiting on deployment, can we do this in Jira Next Gen reporting, if so how?

You'll need to rethink what you mean by "complete" and make sure it ends up in the last column on the board.
