I am trying to edit the Satisfaction field in Jira Cloud to convert a start rating to a numeric value. I cannot do this because the field is locked. Is it possible to unlock the field. A simple no will do, if that is the case; otherwise please tell me how.
It is, as you were expecting, a "no". The fields are locked to prevent you making changes that Atlassian do not want to support in Cloud.
