I was just wondering if there is some sort way to create schemes for issue priorities?
If we decided to customize our own priority list to match our business process with additional items like "High Priority", "Medium Priority" and "Low Priority", it would be great if we could allow these priorities to be viewed only on selected projects and not in each one.
Hey guys - can somebody link to the Javascript trick? :-}
No, see https://jira.atlassian.com/browse/JRA-3821
You could do something with javascript but you may find it's not worth the hassle.

The javascript trick is the only one which works well enough to use - you set up the full list of priorities for all values you want to use, and then have an "if project X, remove all the options I don't want" javascript. It's not too bad to use once or twice, but rapidly becomes a monumental pain if you want more than a couple of "schemes". Also, all your reporting and searching will continue to work off the full list, which leads to inevitable questions from users about it.
That said, it is something Atlassian have on the to-do list. From memory, the last update was "we'd will do it, we'll do it at a project level (not issue level, like most fields), but we're not going to give you a timeframe". That's one step up from the "we don't know if we'll ever do it" response (and the "no", obviously)

This is one of the most voted issues but still not available in JIRA out of the box. But you can try Extended Schemes for JIRA which allows you to manage (hide and show for Projects/Issue Types) not only Priorities but also for Resolutions and Link Types.
