Yes, you can add fields to sub-tasks that could be used as estimates.  You can use the time-tracking field if you want to work in terms of durations.  You could add more simple number fields and tell your people the number in them is hours, days, minutes, story points, business value, anything numeric you can estimate on.  (Note - story points are a measure of relative complexity, they are absolutely NOT time.  If you want to estimate in time units, never call them Story Points, they are not)

However, it is very important to understand that if you put estimates on sub-tasks, they are not to be used in your sprint estimates.  It's fine to say a sub-task estimate is 4 hours, or 12 story points, or whatever, but you can not use that as your sprint estimates, your board must use some other field for the sprint estimate.
