how do i create a Quick Filters for Labels and Epics

Within the Next-Gen project, we have Epic, Labels, Type drop down with lookup values.

Howe do i create those same in the Jira Standard Project within Sprint Boards using Quick Filters.

It isn't possible to replicate the drop-down functionality in classic boards - there is an (old) suggestion for this you can vote for / follow - see: JSWCLOUD-4735 

Quick Filters on classic boards are per specific label or field option - eg. if you have 3 labels, you'll need to create one quick filter per label.

To create Quick Filters, you'll need to be a Board Admin then go to Options (3-dots icon) > Board Settings > Quick Filters.
