From Monday 17/12/2018, on editor used on replies, the table icon doesnt exist anymore. If the user type the usual table tag, this is not 'compiled' and showing plain text as |a|b|.

Just for us to better understand and help you with this issue, can you please confirm if you are facing this issue on Jira or Confluence? I'm asking this because this question was tagged as Jira, but the documentation that you added is from Confluence Server.
Also, would it be possible to send a screenshot of the issue? This will help us to confirm where this is happening in order to replicate this behaviour.

Currently, tables are not rendering correctly on the new issue view. This issue was reported as a bug:
