I am just starting out and haven't changed anything ... but I can't make a simple issue appear on the board ... this makes no sense as I am just following their automated prompts and filling in the required fields.

The issue you are creating in your video is an Epic. Epic type issues don't display on a Team Managed Software Project Kanban board as cards. If you go to the Backlog option in the panel on the left...
...and either press E or pull down the Epic filter and enable Show Epic Panel, then you will see a panel on the left only in the Backlog screen showing a list of the Epics.
You can see Epics on the Board view as headers for swimlanes if you choose Group By: Epics
Or, if you have Group By None then you will see the Summary of each issue's parent Epic displayed in the issue's card.

With a Team Managed project Kanban board the issues may be in the Backlog or on the Board. When you create the issue by using the blue Create button, the issue will automatically be placed in the Backlog (when the Backlog feature is enabled), even if you are viewing the Board when you click the blue Create button. You should see those Tasks in the Backlog screen in the issues listed under the heading "Backlog".
On the Backlog screen you can then drag those issues upwards and drop them in the list area under the heading "Board".
If you want the issue to be created directly in the board use the +Create Issue option that shows within the column. The option appears statically in the left-most column. For the other columns you have to hover your mouse at the bottom of the column to make it appear.
You can also use the +Create Issue option that shows at the bottom of the list section labeled "Board" on the Backlog screen.

In the video you will see:
- no board panel in the backlog screen (for the drag and drop)
- no create issue option on the board screen (in-view or via hover)

Are there any other users of your Jira instance? Do they have the same experience?
