is there any ability to keep stored and archived the completed tasks in jira software on kanban lists ?
is there any ability to have a hidden list or to otherwise archive or export them ?
I collected the ways to archive Jira issues in an earlier blog post, I think it is still accurate.
On top of that, 2 Solution Partners built interesting solutions for archiving Jira issues in PDF and PDF/A formats that are stored long-term in Document Management Systems. (The issue contents are still indexable, searchable, etc). The PDF and PDF/A versions are both worth checking.

For a Kanban board there are options that automatically stop displaying issues in the "done" column when they reach a specified age.
For a Kanban board on a Team Managed project, issues that have been "done" for 14 days will no longer be shown on the board. This can't be modified.
For a Kanban board on a Company Managed project, you can determine at what age the issues should no longer be displayed, or choose to never hide the older "done" issues. The option is found under Board Settings > General

thanks, seems I've selected team managed on creation, so that option is not available here

You can find several documents on the internet and posts in this community about the differences between Company Managed and Team Managed projects. Here is one:

There is not an option/flag that changes a project from company managed to team managed or vice versa. You have to create a new project of the desired type and move the issues to it. There are limitations in this migration process though, as documented here:

A board is a view of a set of issues, not a container for issues. You can use a Kanban board to view and report on archived and completed items if you want, but your issues won't be stored in the board.
Projects are the containers for issues.

Thanks, I hadn't realized it is just a view, have enabled now the Issues view too and it makes sense
