I have updated my "work management" workflow at the project level, and there is not way to add a resolution screen. If I go to the admin level, my custom workflow doesn't appear (actually, neither the "work management" or "software" project appear at all, only the "service management" project).
"Resolution" also isn't an option if I want to configure the fields of an issue.
The goal here is to be able to resolve issues, but I don't see any way to add in that functionality.

You can add a transition screen to the transition to Done in your workflow.
Go to Settings > Issues > Workflows
Search for your workflow in the list and select Edit from the Actions column.
Then click on the transition to Done. Then click Edit. There you can add a screen.
Are you using a Team Managed or Company Managed project?
You can tell by looking at the bottom left of the navigation panel.

Update:
I could not find a way to edit the Resolution field outside of using automation.
In order to meet the requirement you are facing, you would need to create specific transitions to account for the resolutions you want to use.
From there, you can create an automation to set the resolution based on the specific transition.
This won't give you a screen that pops up but you can still get to where you ultimately want to be.
I would also make sure you put in an automation to clear the resolution field if the ticket is transitioned from Done to an open/in progress status.
