Why the story is marked with a strikethrough whenever i change the Original Estimate?

whenever i am updating the Original Estimate time for a user story, the story would be marked with the strikethrough in the middle. From my understanding, the strikethrough means the story is marked as "Story accepted" in the workflow. It means the works have been done.

Can you please help to configure so that the dash in the middle when appear when the story is Accepted, or the Bug is marked as done?

My guess is that you have included the resolution field on the issue edit screen (and/or the create issue screen).  You should remove that from the screen, then the resolution won't get set by editing and hence no strike-out

I am not sure that this is a resolution to my problem, I think it has something to with post functions.

Post functions only run on transitions, and you spoke in terms of edit, not transition.  If it is a transition that is doing it and the resolution field is not on a screen, then yes, there's a post-function setting the resolution.
