This feature is intrusive and has inappropriate functionality. If we share Jira tickets on meetings, we now have to be careful about what images are randomly showing up as "covers"... if you really wanted to implement these covers, you should have randomly picked colors and let optionally use random images.
We need to shut off these covers and we can't easily do this. Really intrusive.

It is unclear the amount / type of performance testing done to manage problems with views when using cover images. There was a defect for board performance for team-managed projects and a suggestion to allow bulk-removal of cover images from work items; I recall both were closed as "won't do".
You could submit a new suggestion from the feedback option inside Jira (under the ? Help icon), and / or...
As you are on a paid license, your Product Admin could submit this as a defect to Atlassian Support, explaining the challenges this feature causes: https://support.atlassian.com/contact#/
