When looking at an issue, is it possible to determine which screen is being displayed?
We no longer want a specific field to show up in issues associated with a project. I have edited and removed the field from all the screens and schemes that the project is using, yet the field still appears when I view the issue.
Priority is a system field automatically shown on the summary screen. You need to hide it in the field configuration scheme
when you say 'view' do you mean in the issue summary or when you open it for edit. If the field is still associated with the issue it will appear on the summary even if it isn't on any screen.

You should open the project settings -> screens. Then find screens, which are used for this issue type and have a look, if this field is present there.

Also could you attach a screeshot with this field? If you can see this field in the board, then you should remove this field in the board settings

The field in question is "Priority". Our folks are using the "Issue Priority" field instead.
