I have a number of Customised Fields that are dates but they also have a default time of 12pm which I dont want or need. Is there anyway to hide or remove these?

If you go to Custom field and you click on the "..." on the right of your date field, you have Context and default value. You can manage something here by... not putting any default value to your field.
For your old tickets already created with that date, you could clear the field with an automation maybe.
