I start the process of creating another board and chose the option for existing projects ( where it says multiple projects can be linked to one board) the next drop down box is projects - Bit when I search or press the arrow it says there are no projects? How do I therefore add projects to this new board?

What type of board are you trying to create? Typically, board locations can only be associated with a single project, but you can modify the filter to include multiple projects.

I am trying to create a Scrum board so I can see the tasks (in the current sprint) of my team on the 2 different projects they are working on. I followed advice I found here, by going to the main search function, selecting all boards, it then shows the all live projects, I then selected create board and it gives you a choice of what kind of board, I selected existing projects - it says under this that multiple projects can be shown on one board - but then I cannot select my projects.

The board can only be "associated" with a single project through the Location field. However, you can have issues from multiple projects show up on the board by changing the filter associated with the board.
So a filter that had something like Project = ABC will only show issues from that project. The Location for the Board would be ABC.
However, you can change the filter (or use a new filter) that looks like Project in (ABC, 123, XYZ) and all issues from all three projects would show on the board. However, the location field can still only have one of the 3 projects listed.
