A portion of the company I work for was acquired. With that I need to migrate Jira and Confluence data from the current instance to a new instance (that I need to figure out how to set up) so the acquiring company can then move the data from the new instance I set up to their Atlassian sites.
Importing users and apps I am trying to avoid as the important part is the data.
I think I have a good plan but wondering different options.
I have some admin experience but I have not completed any Atlassian migrations previously.

I recommend that you look at the Copy Data option.

It depends a lot on exactly what you want to move.
Users/Groups associated with the data
Current state or full history
Configurations
Do you have apps in your instances that add functionality or manage data? Will those apps be in the destination instances?
In Jira - Filters, Dashboards, Plans
Is the destination environment going to have the same or higher subscription plan for each product?
If you have concerns about being in over your head you might consider recommending engagement of an Atlassian Solution Partner that has a specialization in migrations.
