What does it mean when email address is visible to everyone in Atlassian Jira?  What are the risks and benefits (if any)?  What are the risks and benefits of the other 2 options - "Organisation" and "Admins"?

Profile details visibility (& Email visibility) states 'who can view your email address'. 
With that, if you restrict that within your organization, then only the users in your organization can view.

E-mail addresses should only be visible to your organization admins. What do you mean when you say it's visible by anyone?
