A team-managed project only allows you to choose for either grouping by sub-task or grouping by assignee. Sub-tasks will only show on the board if you choose grouping by sub-task.
A company-managed project does allow you to do what you want. But as far as I know, there is no way to do what you want on a team-managed project. The Atlassian docs also confirm this: https://support.atlassian.com/jira-software-cloud/docs/manage-subtasks-in-team-managed-projects/

That makes subtasks very ineffective on team managed projects. I hope Atlassian fixes this soon, because it's a significant issue where the team forgets that they have subtasks assigned to them.

A cumbersome way to achieve it, or part of it, is to add a quick filter that filters by specific user, then group the board by subtasks and use the quick filter to show only your (or other specific user's) tasks.
