We have set security level for all tasks/subtasks. This level restricts access for couple of groups to couple of issue types. We would like those restricted groups to be able to view status of all the issue irrespective if they have view permission or not. In our use case, a user group is not allowed to view a specific type of task/subtask, but it would be helpful for them to see the status/stage to track progress. Is there a way to achieve this?

Not using Issue Security Schemes - these are absolute, you can either see the whole issue, or you can't, as @Sebastian Krzewiński has said.
You could potentially achieve what you're looking for using an App though from the Marketplace, to hide specific field data on an Issue?

I'm afraid that is not possible. Jira will always check if user is able to see issue or not. There is no workaround for that.
