Is there a way to view a historic version of a jira issue (maybe even have a link for it)? E.g. I want to see how a give Jira issue from two years ago (without all the changes that happened in the meantime). The data seems available via the detailed history.

With built-in issue history, you can't filter changes. For this aim, you can try some plugin like Issue History for Jira. My team developed it as a diary for past activities. Here you have different options to filter, including dates. You can choose any date range from the calendar drop-down.
Also, you can get changes for the list of issues or one specific if you need one.

If you are talking about a specific issue version in a specified date, the answer is no. Tab History allows you to see all changes performed on a ticket from the creation to the current date.
