I have a trial of advanced planning and I'm trying to make a demo for our teams. I can't fine the "Initiative" issue type to add it to the scheme so I can use it to group Epics.

By default, there are no initiatives; you have to create them.
This article explains how to do this: Configuring initiatives and other hierarchy levels.
