We want to use the Roadmap feature on my team to get a better handle on our epics as we work through them as a team.
When I turned the feature on, it became clear that the feature was looking for a Start Date and a Due Date for each epic, to place it on the gantt chart.
I had my Jira admin add in the Due Date field and that's working as intended.
However, we can't seem to locate a Start Date field, or figure out how to make the Roadmap feature play nicely with our Epics.
We don't use Sprints, so it doesn't key off of the Sprint Start Date.
And it doesn't seem to care when issues contained within the Epics are moved through our workflow.
So the question is: what is the Start Date the Roadmap feature is looking for, and how can I get it in my project?

You are correct that the basic roadmap uses Start Date and Due Date fields in the issue for the epics. Please ask your site admin to add the field to your views if you cannot see it. For a team-managed project, I believe you can do that yourself without the admin.

There could be several reasons, and I recommend asking your site admin to try the Field Helper to uncover the reason:
