Slight fudge on the use of Jira I suspect but ..
I want to be able to use Jira to build teams for Client work. My vision is to have each workflow (column) as an independant Client with each ticket underneath a Person. Each column (Client) should then be able to display the sum of a bespoke field(s) for example I might want to see the sum of the buy price of all people for Client A and the sum of the sell price for all people in Client A.
Ideally I should then be able to move people between clients and get a realtime update to understand what that does to costs.
Im still forming the idea in m head tbh but if Im really using the wrong tool Ill look elsewhere Excel probably .. ;)

While what I think you're trying to do is eminently possible in Jira, I don't think you're looking at doing it in a way that works in Jira.
This may be down to language though. In Jira, a "column" is a group of status that tell you where an issue is in its lifecycle. It is absolutely not a "workflow" because a workflow is a representation of the issue's lifecycle.
You could use issues to represent people or clients, or both, but the board, columns, and workflow are about process flow, not changing people or client data.
