We have an old instance (6.3.12) running on-premise and we just bought a new license (the license expired a long time ago).
How can we apply it to the server? I have a feeling we need to upgrade first so I was wondering what is the best practice in such a case.

If the license is valid for your environment you should be able to apply it on:
https://yourhostname/plugins/servlet/applications/versions-licenses
There you see the current license key and you should be able to edit it.
