Unable to create a new sprint in a different project.

I've created a new project (Project B), successfully set up Sprint 1 in Project B but when I go to create a new sprint it creates Sprint 36 (which is the next sprint in Project A) 

 

How can I create Sprint 2 which is separate from Project A.

Sprints created on a board can appear on other boards, if the filter of that other board includes even 1 issue in that sprint.   Sprints are not bound solely to a single project or a single board.  Since sprints can contain issues from multiple projects and appear on multiple boards, the sprint naming convention is being derived from the board where that sprint is first created.

I would check the specific board filter in use on the board where you are trying to create this sprint.   If your account does not have the 'manage sprint' permission in all the projects where issues can be selected from by the filter, then you can't create a new sprint on the board.

If the board filter allows you to pull issues from Project A, that can explain why a sprint from project A can appear in other boards.
