I am attempting to use categories but am unable to do so. I have followed instructions from other forum posts regarding the list view, however the issue remains the same in both the list and task views. I do not see the option to add a new category.
Could someone please assist me with this?
Hover on the column name category, this will then show a 3-dot option, use edit field options to add options for "categorie"

As per the screenshot, can you please check if “test” is available in the Category field? Since it’s a single-select field, please confirm whether this option has been added

Hi @Lars Kremers and welcome to the community.
Based on the screenshot i would draw the conclusion that 'Categories' is a custom field that isn't added as context in the field screen schema for project in question.
To check this open up the work item and click on the three dots in the upper right corner of the work item. Go to the "where is my field" and choose 'Categories'
This will show you why the field isn't visible on the screen or accessible in the list.
