I have two different jira instances in the same organization and I see that this instance has different UX experiences.
For example, one of them has the ability to add a column on the issue grid, and the second does not.
How can I check if the UX version is "newer" and how can I enable the exact same UX for both instances?
There are many other minor differences and it's quite annoying.

Share the screenshots. You must be looking at different type of projects in Jira.

That might be a dumb suggestion, but have you tried to scroll right in your first Jira 1 screenshot and then you'll see the column selection?
