You can't get per se updates from every project you are involved in Jira, just because you want to, in the meaning that there are certain permissions which prohibit you from receiving them.
First of all you have to check the notification scheme of every project, and find out WHO is getting notified for every event (or issue update event if you want only the updates, and not the other events). After finding out who is getting these notifications, you have to add you project role to all the events you are interested in.
In addition to this, you have to check the security scheme and see the security levels. There is a possibility that your admin has impose issue restriction based on certain conditions (and according to the project setup). If such scheme exists, talk to your admin. If it doesn't exist, then you are good.
Finally you have to make sure that from your Personal Settings, you have all the notifications ticked on (except maybe the one where you are notified about your changes).
